"I am a carnivore, admittedly so and shamelessly proud, however I was raised to appreciate a balanced diet of meats, fish, poultry, grains, fruits and vegetables. I’ve always been willing to try new things, especially open to trying vegetarian dishes that use “Meat” alternatives, but most fall short on taste and appeal. When I met LaVerda, whom I find interesting and informed as a member of the vegan community, she engaged me with pictures of her delightful creations. I was recently offered the opportunity to try her new recipe, sausage-gravy with biscuits, it was wonderful! The biscuits and gravy had great smell, texture and taste, surprisingly enough, and I wanted more. I would recommend this recipe for all persons that would like to eat healthier, without losing taste and overall appeal."

"I want to send you a long overdue Thank You note! I wanted to let you know how grateful I am to you for giving me that extra push, a gentle encouragement to take the step towards a plant-based diet. I don't know if you recall what a terrible and painful state of health I was in when you encouraged me to leave my beloved cheese alone!
I was having a very difficult time playing my B Flat clarinet because of the joint pain and swelling I was having in my fingers! I had tried all the rubs and creams available, but nothing stopped the pain. I was in so much pain that Friday night after our orchestra practice that I was in tears. I felt that I would have to give up playing and I so much enjoyed it, but the pain was getting unbearable.
You were so kind to me that night. You asked me about my diet and I shared that I was still eating cheese, even though I had given up milk and eggs. You shared your story with me and urged me to stop the intake of cheese. You assured me that I would see and feel the difference. I did as you suggested and to my surprise I could feel the difference in one week. My pain decreased and the swelling in my fingers went down within one week. I had more flexibility in my fingers when playing.
It has been almost 5 years since that Friday night. My joints are no longer inflamed or swelling, and my hands have returned to normal! I am so grateful and appreciative for your continued encouragement through the years. Thank You!"

"Over the past six years, Kenneth Sr. has undergone eight surgeries due to diabetic and Peripheral Artery Disease (PAD) complications. His last surgery, took place in September 2011 which brought not only physical, but psychological challenges for our entire family. I asked, "God, what can I do?" Immediately, a NEWSTART Lifestyle center came to mind and the plans began to unfold as to how we would get there.
On December 3, 2011 my husband and I begin our journey to a NEWSTART Lifestyle center, located in Alabama. We were there for a total of 17 days. During this time my husband had an examination and was placed on an all greens diet with fasting in between and all natural remedies. Within 4 days a significant amount of blood flow begin to greatly improve in both legs with healing of the ulcer at the bottom of his foot (an ulcer the size of a quarter, now 90% closed)! This is the same foot when just two months earlier the doctors said there was a great chance that they would have to amputate half his foot. Dark patches which had begun to form on the other leg due to poor circulation, were now fading and regaining its natural color. Today, he is wearing both (a left and right) shoes and until now, he has not been able to wear a pair of shoes in 3 years!
Kenneth Sr. was taken off insulin in which he had been dependent upon for nearly 20 years. During this time we found that his pancreas was producing insulin, which as a result, he no longer required the injections of artificial insulin. Within 8 days his insulin stabilized. Today, his pancreas continues to produce insulin and the medical doctor reports that his kidneys and liver show significant regeneration improvement!
Lastly, he was on several medications for high blood pressure, high cholesterol, and a blood thinner, along with a baby aspirin he took daily. Within 12 days he was off all, but 2 of his medications. Today, he is completely off all medications. We thank God, for He has done marvelous things through the help of the physicians and staff at Uchee Pines Institute in Seale, Alabama. We pray that your hope, faith and joy in God will continue and be strengthened."
