Stuffed Shells Recipe

- 1 packet of Extra Firm Tofu 16 oz.
- 2 Cups Vegenaise Soy Mayonnaise
- 1 Tbsp. Basil
- 2 Minced Garlic Cloves
- 1Tbsp. Oregano
- 2 Tbs. Onion Powder
- 1 tsp. Garlic Powder
- 1 tsp. Sea Salt
- 4 C. Finely Chopped Fresh Spinach
- 20-24 Jumbo Pasta Shells
- 4-5 C. Tomato or Spaghetti Sauce
- Shred Block of “Follow Your Heart” Cheddar Vegan Gourmet Cheese Alternative
- Rinse, drain and mash tofu.
- Put tofu in a large bowl with the first nine ingredients.
- Mix well. Fill Shells with mixture.
- Spray bottom of 9x13 pan with Canola Cooking Spray and pour 2 cups of tomato sauce on bottom of pan.
- Place stuffed shells on sauce.
- Drizzle sauce in the center of the shells. Sprinkle the Cheddar cheese alternative on top and cover with foil.
- Bake at 350 degrees for 45 minutes.
